Beef Zucchini and Rice Skillet

Ingredients
- (1lb) Ground Beef
- (1 Large) Onion
- (1) Green Pepper
- (2 Tablespoons) Minced Garlic
- (1 teaspoon) Cajun Seasoning
- (1 teaspoon) Basil
- (1 teaspoon) Thyme
- (1 teaspoon) Marjoram
- (to taste) Salt
- (to taste) Pepper
- (2 medium) Zucchini
- (4 Large) Roma Tomates
- (1 Cup) Chicken Broth
- (1 Cup) Rice
- (1 Cup) Cheddar Cheese Shredded
Directions
Add the ground beef to a large skillet or dutch oven, set over medium high heat. Cook, stirring often and crumbling the meat, until the beef is cooked through,
about 6 minutes. Drain the meat to remove excess
grease and return to the skillet. Add remaining ingredients, EXCEPT the
cheese to the skillet and stir to evenly
combine. Bring the mixture to a boil,
then reduce heat to a simmer. Cover and cook for 12 - 16 minutes,
stirring occasionally until rice is cooked. Remove the skillet from the heat and
sprinkle cheese evenly overtop. Cover
and allow cheese to melt.
