Tri Tip

Tri-tip is a triangular cut of beef from the bottom of a cow's sirloin. It's also known as a California cut, Santa Maria steak, or Newport steak. Characteristics 

• Lean and boneless, but still tender and flavorful
• Lower in fat than ribeye, but more marbled than tenderloin
• Has a loose grain that's almost spongy in texture
