The average hang weight for a full cow is between 800 - 950 lbs, making a 1/4 cow between 200 - 275 lbs., with an average of a 60 - 65% finished yield. We charge $8.50 per pound based on hang weight for a half cow.

Roughly speaking, with butcher's choice cuts, 1/8 of your meat will be ground and stew, 1/16 will be roasts (chuck, shoulder, rump, sirloin tip etc.) and 1/16 will be steaks (sirloin, ribeye, filet mignon, tenderloin etc.)
Price is calculated from hanging weight. Final price estimates include processing/cut & wrap fee.
Your beef will dry age for 14 days before being processed. Orders are typically ready for pickup / delivery about 3 weeks after initial processing date. You will be notified when your order is ready for pickup.
